Our journey started in 2002, when Kim’s niece Rachel was diagnosed with Celiac Disease. As the rest of the family was tested, many were positive for Celiacs. It was a relief for so many of our symptoms to finally be explained!
We get together often as a family and figured out quickly how to make dinners gluten-free. Desserts were the hardest meal to change! Kim created her own blend of gluten-free flour shortly after diagnosis and started making cookies. Family made the best test subjects. Once the the Aunt Kim’s GF flour was perfected, testing on friends began. Needless to say, the GF treats were a huge success.
